On a flight from Las Vegas to Minneapolis I sat next to Barb from Pepin, WI. who is the mother of a soldier deployed to Afghanistan. (We military moms just seem to find each other!) She shared a great recipe for her son's favorite muffins and also gave me some suggestions on how to pack food for shipping. • To get decorated sugar cookies safely overseas, freeze and pack in bubble wrap before mailing.
• Muffins and other cake-like foods are less likely to get moldy if
you freeze them and mail them
while still frozen.
Preheat oven to 425 degrees.
MIX TOGETHER:
1 cup white sugar
1 cup brown sugar
3 cups flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1 cup mini chocolate chips
1 tsp. salt
1/2 cup nuts (optional)
MIX THE FOLLOWING SEPARATELY; THEN ADD TO DRY INGREDIENTS. BEAT ENTIRE MIXTURE WELL.
3 beaten eggs
1 cup oil
3 tsp. vanilla
2 1/2 cups grated zucchini
Fill muffin cups 3/4 full.
Bake for 15-18 minutes.
